Alaskan Black Cod
"A favorite Alaskan Seafood Dish from Chefs Jake and Mary Collins. Fresh caught local black cod with a signature Hoisin Ginger Sauce."

1/2 cup soy sauce or teriyaki sauce
1/4 cup rice vinegar
1 1/2 Tbs Ginger-root; fresh; minced
1 1/2 Tbs green onion, finely chopped
1 Tbs honey
1 med-larg garlic clove, minced
1/4 cup hoisin sauce
2 1/4 tsp chili sauce
1 Tbs oil for sauteing
4 - 7 oz Alaskan Black Cod
1. Whisk first 6 ingredients in small bowl.
2. Cover and chill. Bring to room temp before serving.
3. Can be made a day ahead.
4. Preheat oven to 450. In a small bowl mix the hoisin sauce with the chili sauce. Heat oil in an oven proof saute pan large enough to hold the fish.
5. Add the cod skin side up sear for 2 mins. then turn fish and spoon the hoisin sauce over filets and move pan to oven for about five mins.
