Espresso Mocha Creme Brulee

A new twist on an old favorite...
INGREDIENTS:

Makes 7 Ramakins:
2 lbs. chocolate chips (semi-sweet)
2 cups heavy cream
1/2 cup sugar
Pinch salt
8 egg yolks
2 oz. espresso (brewed)
1/4 cup cocoa powder

Put cream, all sugar, salt and vanilla in saucepan and bring to boil. Take half of mixture off fire and add half
to yolks (stirring while pouring). Then pour yolk mixture back into saucepan and bring to simmer. Remove
and then pour into ramekins and put into water bath in oven for 30-35minutes until firm or center reaches
170 degrees |
