Curried halibut cakes with pickled onion and carrot salad

Alaska halibut cakes
INGREDIENTS:


1, 2 ½ lb halibut fillet
4 cups (day old or cold) garlic mashed potatoes
1 ½ cups chopped shallots
½ cup curry
3 eggs
3 cups panko crumbs
1 tbsp red pepper flakes
1 tbsp powdered garlic
1 tbsp parsley
3 cups flour
salt & pepper

Coat halibut fillets in curry, salt and pepper and cook in flat pan with oil on both sides till rare but flaky. Take off heat and let cool at room temp. get three bowls and place panko, chopped parsley, red pepper and powdered garlic in one. Whip the eggs and place in another and flour in the last. After cooled, flake halibut into potatoes and add ½ cup panko till stiff and able to form patties. Take patty and coat in the flour then the egg and finally in the panko mixture. Brown both sides in skillet in oil on medium heat and serve. Makes 10 fist-sized cakes.
