Alaska King Crab Cakes Recipe
"A classic Alaskan favorite appetizer: Alaska king crab cakes" -- 2012 summer season; submitted by Chefs Joe Martin and Sam Cady
½ pound Alaska Red king crab meat, Chopped (other crab can be substituted)
2 fresh garlic cloves, minced
1 small shallot
2 leaves fresh basil, chopped
1 sprig of fresh thyme leaves
½ of a Red bell pepper, Brunois cut (very fine dice)
1 large egg
¼ cup panko bread crumbs plus extra for coating the cakes before pan frying
Good quality oil for frying (not olive oil)
1 teaspoon each, Salt and pepper
Method Combine all ingredients (except the oil) in a mixing bowl and mix on low speed until it starts to stick together, if the mixture seems too dry, add another egg.
Form into small Patties
Coat with panko and refrigerate for one hour
Put enough oil in a thick bottom frying pan to cover the bottom, and place on medium high heat
Once oil is hot, sear the crab cakes until brown on both sides.
