Pear Proscuitto Appetizer

"A simple summer classic. Flavorful, light appetizer or first course preceding the main entree."
1 Asian Pear
2 cups balsamic vinegar
1 cup sugar
1/2 cup bleu cheese crumbles
1 cup baby field greens
Thinly sliced Prosciutto
Combine sugar and balsamic vinegar and put on high flame. Reduce the mixture until it sticks to a spoon.Slice pears and add to greens. Fold proscitto slices decoratively over pears and greens. Once vinegar mixture is room temp drizzle over salad and add bleu cheese crumbles
